- • ½ cup of sweet potato, chunks
- • 1 cup of fresh spinach leaves, cleaned
- • 1 tbsp of freshly ground black pepper
- • 1 tbsp of olive oil
- • Salt to taste
- In a bowl, add sweet potato chunks, ½ tbsp of olive oil and salt.
- Bake at 175C for 20 min.
- Keep them aside.
- In a pan, add olive oil and heat it.
- Add spinach leaves, baked sweet potato chunks, pepper and salt.
- Sauté for 2-3 min.
- Serve hot.
