- • 1 cup of cherry tomatoes cut into halves
- • I cup of bell pepper cut into chunks
- • 1 cup of arugula
- • 1 cup of lettuce
- • ½ cup carrot grated
- • 2 tbsp of lemon juice
- • 1 tbsp of extra virgin olive oil
- • Salt to taste
- Add cherry tomatoes, bell pepper, arugula, lettuce and grated carrot to a bowl.
- Add olive oil and give it a quick twist.
- Add lemon juice and salt to the veggie mixture.
- Give a gentle mix.
- Serve fresh.
